The Marlain Chocolatier boutique was founded in 1985 by Marlain Jean-Philippe, a Maître Chocolatier-Confiseur.

Marlain obtained a diploma in Pâtisserie and in French cuisine from the École Hôtelière of Martinique in 1972. In 1985, he took a specialized course in chocolate at the École Le Nôtre in Paris, France.

Between 1985 and 1994, Marlain won many medals and trophies when he participated in pastry and confectionery competitions at the yearly Grand Salon d'Art Culinaire du Quebec.
